Filo Pastry Parcels with Mushrooms and Squaquerone Cheese
8 sheets filo pastry
250g Squacquerone cheese (a soft creamy cheese) or another soft cheese such as Crescenza
125g Mixed mushrooms with Porcini by Valbona
1 jar of Grilled mushrooms by Valbona
oil or butter for brushing
1-In a mixer, chop the Mixed mushrooms with Porcini by Valbona with 80g Squacquerone cheese and 30g milk until smooth and creamy.
2-Cut the Grilled mushrooms by Valbona into pieces.
3-Place the two sheets of filo pastry one over the other, and put a few pieces of grilled mushrooms, a tablespoon of squaquerone cheese and the chopped chives in the middle.
4-Close the parcels and place them on an oven tray (covered with greaseproof paper), making sure that they are positioned with the closed part (where the edges overlap) facing downwards. Brush with oil and butter.
5-Bake in a pre-heated oven at 180°C for about 15 minutes. Keep an eye on them because they quickly go brown; they should be golden brown but not too dark.
6-Meanwhile, heat the mushroom cream (in a microwave oven or a pan). When the parcels are cooked, serve them by putting a little mushroom cream on the plate and then placing the parcel on it.
