Cous cous with courgettes, mackerel and grilled vegetables
For the cous cous:
240g cous cous
1 tablespoon salt
1 tablespoon extra-virgin olive oil
For the topping:
1 large courgette
half a shallot
150g Valbona Grilled Peppers
4 tablespoons extra-virgin olive oil
200g mackerel with lemon juice
1 - Begin by preparing the vegetables. Wash and dice the courgette. Thinly slice the shallot and sauté it in 2 tablespoons extra-virgin olive oil; add the diced courgette and cook over a high heat for a few minutes. Lower the heat, season with salt and continue cooking for 10 minutes, until the courgette is soft.
2 - Drain the grilled peppers and add them to the courgettes; mix well to blend all the ingredients.
3 - Then make the cous cous. Put the water and salt in a low wide pan and bring it to the boil. Remove from the heat and pour out the cous cous; mix with a spoon, cover with a lid and let it stand for 5 minutes.
4 - Drizzle with a tablespoon of extra-virgin olive oil and mix it well with a fork. Add the drained and chopped mackerel and the cooled vegetables.
5 - Season with 2 tablespoons of extra-virgin olive oil, mix well and serve the vegetable and mackerel cous cous.
